Coleslaw and apple salad


4 cups cabbage, chopped finely
1/2 shallot, chopped
1/4 cup fresh parsley, chopped
2 tsp Mélange d’Ailleurs spices from Les Épices de Marie Michèle
1/2 lemon
1 apple, chopped finely
olive oil
To taste cider vinegar from Vinaigrerie Gingras
To taste salt and pepper


Finely chop apple and soak in salt water to prevent oxidation. Drain well. Mix all ingredients. Add oil and vinegar to taste, and salt and pepper. Set aside 15 to 30 minutes before serving.
